Couscous Salad
200grams of couscous
250ml of water or boiling stock
50grams of cherry tomatoes cut in halves
1 diced red pepper
1 diced cucumber
1 sliced red onion
5 tbsp olive oil
chopped corianders
oregano
pepper
Cook the couscous in a large bowl with the stock. Cover with film and wait 5 minutes or until all the water is absorbed. Separate the grains with a fork.
Add the tomatoes, the cucumber, the red pepper, the onions and the corianders. Drizzle with olive oil and season with pepper and oregano.
