Shrimp Curry
400 grams shrimp, raw
1 big reinette apple
1 chopped onion
2 cups coconut milk
2 tbsp curry, powder
1 sprig corianders, chopped
Heat the oil in a pan, and braise the onions. Peel the apple, dice it and add into the braise. Add the curry, stir and add 1 cup of hot water. Boil for 5 minutes. Add the coconut milk. Boil and add the shrimps. Cook for 5 minutes and sprinkle with the corianders. Serve with whole grain rice.
